Easy Eggplant Marinara 2024 | Under 300 Calories

Ingredients | 6 total

  • 1 large (about 1 ½ pounds) eggplant
  • 2 large eggs
  • 1 container (15 ounces) Buitoni® Refrigerated Marinara Sauce, heatedBuitoni® Refrigerated Freshly Shredded Parmesan Cheese
  • Ground black pepper
  • 1 cup seasoned panko breadcrumbs

Directions

  1. Spray large baking sheet with nonstick cooking spray. Slice eggplant into ½-inch-thick slices. Whisk eggs.
  2. Dip eggplant slices into eggs and then coat with breadcrumbs.
  3. Place on baking sheet.
  4. Bake at 400° F for 20 minutes. Turn slices over and bake for an additional 20 minutes or until slightly browned.
  5. Top each eggplant slice with 1 to 2 tablespoons sauce and ½ tablespoon cheese.
  6. Bake for 5 minutes to melt cheese. Season with pepper.
