- 2 medium zucchini
- 1 pound salmon fillet, skin removed and cut into 8 pieces
- 4 thick lemon slices, cut into 4 quarters
- 3 to 4 tablespoons Buitoni® Refrigerated Pesto with Basil
- 16 cherry tomatoes
Directions
- Cut ends from zucchini. With vegetable peeler, cut into long ribbons lengthwise.
Preparation: 5 min - Thread ingredients onto 8 (10-inch) skewers in any order: 1 piece of salmon, 3 zucchini ribbons, 2 tomatoes, 2 lemon pieces. (If using wooden skewers, soak in water for 30 minutes to prevent from burning while grilling.)
Preparation: 10 min - Brush skewers on all sides with pesto.
Preparation: 3 min - Grill or broil, without turning, for 5 to 8 minutes or until salmon is cooked through.
