- 1 large (about 1 ½ pounds) eggplant
- 2 large eggs
- 1 container (15 ounces) Buitoni® Refrigerated Marinara Sauce, heatedBuitoni® Refrigerated Freshly Shredded Parmesan Cheese
- Ground black pepper
- 1 cup seasoned panko breadcrumbs
Directions
- Spray large baking sheet with nonstick cooking spray. Slice eggplant into ½-inch-thick slices. Whisk eggs.
- Dip eggplant slices into eggs and then coat with breadcrumbs.
- Place on baking sheet.
- Bake at 400° F for 20 minutes. Turn slices over and bake for an additional 20 minutes or until slightly browned.
- Top each eggplant slice with 1 to 2 tablespoons sauce and ½ tablespoon cheese.
- Bake for 5 minutes to melt cheese. Season with pepper.
