Ingredients:
- 10 ounces spinach leaves, chopped
- Salt and black pepper to the taste
- 14 ounces mushrooms, chopped
- 2 garlic cloves, minced
- Handful parsley, chopped
- 1 yellow onion, chopped
- 4 tablespoons olive oil
- 2 tablespoons balsamic vinegar
Directions:
1. Heat up a pan with the oil over medium-high heat, add garlic
and onion, stir and cook for 4 minutes.
2. Add mushrooms, stir and cook for 3 minutes more.
3. Add spinach, stir and cook for 3 minutes.
4. Add vinegar, salt, and pepper, stir and cook for 1 minute more.
5. Add parsley, stir, divide between plates and serve hot as a side
dish.
