These are amazing frosted pumpkin cookies, they are absolutely delicious. The consistency is more cake-like than cookie. The cream cheese frosting makes them perfect. A big glass of milk makes this a perfect snack. This makes a big batch so there is no need to double this recipe.
Ingredients
- 1 cup Shortening (Crisco)
- 3 cups sugar
- 2 eggs
- 1 (30 oz.) can pumpkin
- 1 teaspoon vanilla
- 5 cups flour
- 2 teaspoons cinnamon
- 2 teaspoons nutmeg
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1 teaspoon salt
- Frosting
- 2 (8 oz.) packages cream cheese, softened
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla
Instructions
- Combine shortening and sugar, mix until smooth and creamy. Add eggs. Mix until combined, then mix in pumpkin and vanilla. Add flour, cinnamon, nutmeg, baking soda, baking powder and salt. Mix until all combined. Bake at 350 for 10 to 12 minutes. Let cool and then ice.
- Frosting
- Combine cream cheese and butter until smooth. Add powdered sugar and vanilla, until all combined.
