Strawberry Spinach Salad

Ingredients

• Salad
• 1 pound Spinach ( Brittany, Teri and I mix in additional lettuce)
• 5-6 pieces of bacon, cooked crisp and crumbled
• 1/2 red bell pepper, chopped
• 3/4 cup slivered, toasted almonds
• 1/2 cup, freshly grated parmesan cheese
• 2 cups, fresh strawberries, quartered (or raspberries)
• 3-4 ounces won ton wrappers, cut diagonally and fried
• Dressing
• 1/2 cup red wine vinegar
• 1/2 teaspoon dry mustard
• 1 teaspoon salt
• 1/2 cup sugar
• 1/2 cup strawberry or raspberry jam
• 3/4 cup oil

Instructions

1. Salad: layer the salad ingredients in large bowl.
2. Dressing: mix all ingredients in a bowl until smooth. I use an immersion blender
