Tomato purée, olive oil, garlic and dried spices sit for hours to let the flavours blend in this interesting, uncooked pizza sauce. The thickness of the sauce depends on the amount of water used; it should be somewhat viscous.

Serves: 8 

  • 175g (6 oz) tomato purée
  • 5 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • salt and freshly ground black pepper to taste
  • 1/2 tablespoon dried oregano
  • 1/2 tablespoon dried basil
  • 1/2 teaspoon dried rosemary, crushed
  • 300ml (10 fl oz) water

  1. Mix together the tomato purée and olive oil.
  2. Mix well.

  4. Add garlic, salt and pepper to taste, oregano, basil and rosemary.
  5. Mix well and gradually add the water, stopping when you’ve reached your desired consistency.
  6. Let stand for several hours to let the flavours blend.
  7. No cooking necessary, just spread on pizza base.


Make a large batch of this pizza sauce ahead of time, and freeze in small portions – just enough for 1 or 2 pizzas. Then you’ll have homemade pizza sauce on hand whenever you need it!
