I got this recipe from a girl in our ward, Rachel Guymon. This recipe originally came from Martha Stewart. It is moist and really tastes like bananas.  The sour cream helps keep in the moisture. My go to banana bread recipe.

Ingredients

  • 1 stick unsalted butter, softened at room temperature
  • 1 cup sugar
  • 2 eggs
  • 1 cup very ripe bananas-smashed
  • 1/2 cup sour cream
  • 1 teaspoon vanilla
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 350 degrees. Grease a bread pan and set aside.
  2. In a mixing bowl, cream butter, sugar and eggs.

  4. In a separate mixing bowl, smash bananas, add sour cream and vanilla, mix until well blended. Add banana mixture to butter mixture.
  5. In a third mixing bowl, mix flour, baking soda and salt together. Gradually add the flour mixture to the banana and butter mixture. For best results, do not over mix. Once all ingredients are combined. It should be a little lumpy.
  6. Pour the batter into the greased bread pan and bake for 1 hour or until a toothpick comes out clean.
  7. When done remove from pan, place on a cooling rack and let cool.
