This is another recipe I got from my Aunt Edith Holden. I didn’t even realize I had gotten this from her until I looked at the recipe card and at the bottom was her name. This is another recipe that starts with a box cake mix. Easy and yummy!
Ingredients
- 1 yellow butter cake mix
- 1/2 cup vegetable oil
- 4 eggs
- 1 can mandarin oranges, do not drain
- 1 cup nuts, chopped
- 1 container Cool Whip
- 1 large instant vanilla pudding
- 1 20 oz. can crushed pineapple, do not drain
Instructions
- In a mixing bowl combine cake mix, oil and eggs. Mix until smooth.
- Add mandarin oranges, including the juice and the chopped nuts. Mix until combined.
- You can bake this in a greased 9 x 13 pan or in 3 layer pans.
- Bake at 350 for 25 minutes.
- Remove and let cool completely
- Icing:
- In mixing bowl combine box of pudding with crushed pineapple with juice, until pudding looks dissolved. Mix in Cool Whip until combined with pudding mixture.
- Frost cake.
