A simple, quick and easy recipe. I got the recipe from my niece’s mother-in-law. It was a Cottle family favorite. It has become a favorite of our family as well. As always, the recipes I love are quick and easy.
Ingredients
- 1 pound ground beef (or chicken)
- 1/4 cup onion diced
- 1 can cream of mushroom soup
- 1 10 oz. can enchilada sauce
- 1 TLB. chopped green chili
- 1/2 cup milk
- 2 cups grated cheese
- 10-12 corn tortillas
- sour cream
- Avocados
- Lettuce
- Tomatoes
Instructions
- Sauté ground beef and onion. Drain grease and add soup, enchilada sauce, green chili and milk. Cover and simmer for 20 min. Place tortillas one at a time in a pan with a little hot oil for just a minute to soften. Fill them with cheese and roll them up. Lay filled tortillas in skillet on top of hamburger mixture. Cover and cook for another 5 minutes. Sprinkle with cheese on top and serve when melted. Serve with sour cream, avocados, lettuce and tomatoes if desired.
