Perfect Hard Boiled Eggs Every Time

I make a ton of hard boiled eggs. My husband and 2 out of 3 kids love to have hard boiled eggs in the fridge for breakfast on the go or for a late afternoon snack. The boy and I do not. We are not big on eggs, just scrambled with a little cheese please. However eggs need to be decorated for Easter so I am making eggs again today and I thought I would share a few of the tricks I have learned over the years.

The first one is from Pinterest. (Thank you Pinterest, I love you.)

If you add a tablespoon of baking soda to the water when you hard boiling your eggs, will make the shells peel off easier. Try it. It works great! Not to mention it makes the job much easier for little hands.

The second one is from trial and error.

Take a dozen extra-large eggs and place them a large pot with enough cold water to not only cover the eggs, but that the water level is at least an inch over the eggs.

Bring to a rolling boil, reduce the heat to medium-high, and set the timer for 20 minutes.

Then carefully drain the hot water from the pot and add cold water and some ice to the pot. The cold water stops the eggs from cooking and keeps the yolks yellow. I usually do this in the sink by slowly draining the hot water and adding cold water, but another way to do this is to have a separate bowl of ice cold water ready that you can just put the eggs in.

Once your eggs have cooled return them back to the carton and marked with the date. They will last for about a week in the refrigerator if you keep them in the shells.

The third one is from  my friend melissa.

You can tell if an egg is done by spinning it. Start with the egg on its side and give it a spin. If it spins upright, it is done. Because if the center is still soft, the egg won’t balance to an upright spin, it will just wobble around. Pretty cool old school science and the kids get a kick out of it every time.
