Taquitos was one of the things we served.  I made thousands of these over the years.  When we sold it I thought I would never for get the recipe. I did! I think this is pretty close to the original. Serve with salsa.

Also delicious served with quacomole

Ingredients

  • 4 1/2 lbs. hamburger
  • 3 tsp. onion salt
  • 3 tsp. garlic salt
  • 3 tsp. pepper
  • 3 tsp. salt
  • 1 1/2 tsp. cumin
  • grated cheddar cheese ( I think about 4 cups)
  • 1 1/2 Tlb. chili powder
  • 6 doz. corn tortillas
  • cooking oil
  • toothpicks
  • salsa

Instructions

  1. Fry the hamburger with the onion salt, garlic salt, salt, pepper and cumin. Its best to really try to get the hamburger chopped up into small pieces while you cook it.
  2. When cooked drain off the grease. Then you need to sprinkle with the chili powder and then the shredded cheese. Mix until the cheese is melted.
  3. Heat the oil, then take each corn tortilla and dip just a few seconds in the hot oil. Lay the tortilla on a paper towel to remove extra oil. I usually do a dozen at a time.

  5. Take each tortilla, place about a tablespoon of meat mixture in the middle of the tortilla, fold the tortilla over the meat mixture.
  6. Shape the meat into a log and slide it back a little still keeping it covered with the tortilla. Roll tightly into a small log. Close with a toothpick. Do this with each tortilla. The more you do the better you will get.
  7. In the same pan you fried the tortilla’s in, you might need to add a little more oil. Then place a few taquitos in the hot oil and fry only about 2-3 minutes. You want the tortilla crunchy but not burned. Serve with salsa.
  8. You can freeze these before you fry them.
