When we first used this seasoning recipe we did BBQ for ward parties and would cook the meat in pit, in the ground. We have done this for years but now we do it in the oven.
Ingredients
- 1/4 cup brown sugar
- 3 tablespoons garlic salt
- 3 tablespoons onion salt
- 1 teaspoon cayenne pepper
- 1 teaspoon chili powder
- 3 tablespoons meat tenderizer
- 3 tablespoons liquid smoke
- 15 pounds beef roast ( you can use cheap cuts of meat 7 bone roast )
- heavy duty foil
- cheese cloth
Instructions
- Preheat oven to 450
- In a bowl combine all the seasoning ingredients.
- Take meat and cut a few slits in it, not all the way through.
- Rub meat all over with the seasoning, and in the slits
- Wrap meat in cheese cloth and then in heavy duty tin foil.
- Place in a deep pan. ( you need to have room for juice)
- Cover pan tightly with foil
- Place in 450 degree oven for 1 hour.
- Reduce oven to 225 degrees and cook for 12 hours.
- When meat is done remove from oven and let sit until cool enough to handle.
- Remove foil and cheese cloth and shred meat, remove fat and bones
